Can you tell from my mom's collection of recipes that she loved lemons 🍋🍋🍋? Bright and acidic lemon really enhances so many dishes and creates a much more complete flavor than dishes lacking enough acid. This dish is really wonderful! For a slightly more decadent version, try the Lemon Linguine recipe I've posted to this blog that my mom also loved (main difference = more fat). Who wouldn't love finishing off a busy day with a big bowl of lemony spaghetti? Maybe a gluten-free person... But I'm sure this would be very delicious with a GF pasta option such as Banza.
