Hollandaise & Bearnaise
My mom's mom, Gloria, was an excellent cook. She is probably the main person who instilled a love a food, cooking, and entertaining in my mom. My grandma Gloria loved French cooking, and she taught my mom many french dishes, one of the most amazing and really simple (if you use the blender method) sauces is Hollandaise. Hollandaise is amazing with eggs benedict, spooned over simply blanched vegetables, or with a meat dish. Bearnaise is great as well, although you have to go find or make tarragon vinegar (which could be a rewarding process in and of itself). My mom's favorite way to make hollandaise was with the blender method, and served over eggs benedict or eggs florentine, or even better, crab cake eggs benedict! Yummo!
