Grilled Mexican Corn with Crema
Grilled corn is wonderful- and the Mexican style- grilled and spread with a creamy sauce (mayo or crema), spice, and lime is a wonderful way to eat corn. My mom loved this recipe and we made it many times. You can use sour cream if you can't find crema Mexicana (although there are many latin grocery stores that carry it if you can't find it in your regular grocery store). Make sure to use chipotle chili powder not regular chili powder to get that nice smokey chipotle flavor! Great in the summer when corn is fresh and sweet!
