My mom loved this recipe for couscous! It is really flavorful and substantial, so much so that it could be an entree or a side dish. She has very conveniently tripled it for you (numbers on the left). Just add these ingredients to the warm and fluffed couscous and you've got a winner on your hands! My mom loved to cook rice/couscous etc. in chicken stock for much deeper flavor (although this would obviously make it non-vegetarian), I would do it this way.
