This recipe is for a great and easy chicken molé that utilizes a slow cooker. The recipe makes quite a good amount of chicken molé, which is great as a taco or enchilada filling. My mom really loved chicken molé! She had the famous molé at Topolobampo in Chicago and loved it! I can't make it quite as good as that, but this was my attempt. I love making this! If you toast the chiles and almonds/sesame seeds it adds to the roasted flavor. Sometimes I add in a handful of raisins if I want to make it slightly sweeter.
