My mom loved Chicken Marbella! Made famous by the classic "The Silver Palate" cookbook. It has a perfect salty, sweet, sour, savory combination of flavors. It is quite simple for how elegant and flavorful the finished product appears and tastes. My mom loved this- she made it with prunes usually but as she noted here, any dried fruits will do. This is a great dish and really good with a simple couscous or mashed potato. Ottolenghi also has an iteration of Chicken Marbella that is divine (will post that version later).
