Chanterelle & Apricot dressing (stuffing)

This is a great dressing (stuffing) to go with a Thanksgiving meal. I made it once for my mom and she really loved it! She loved mushrooms and balancing sweet/salt in savory dishes, and this recipe really nails that. Look for chanterelles around the pacific northwest in the fall (old growth forests) (make sure you know what you are looking for so you don't poison anyone), or at your local Costco (much easier).
