Carrot Cake a la Papadakis

Dear Mr. Papadakis, 
     Do you know that your recipe for Carrot Cake published in the 1990 June edition of Gourmet would have such a profound impact on my mom, Gabrielle? My mom loved this cake so much, it eclipsed all other carrot cakes in her mind. She made this again and again and my whole family loved it! It is simply delicious, so moist, flavorful, amazing texture and flavor. Thank you for sharing it! It has been the sweet and perfect finish to many birthdays and celebrations in my family's history.
