Black Bean Soup with Cilantro a la Captain Dudley

My dad's Black Bean Soup with Cilantro- this was entered in a magazine's Souper Bowl Cookoff! He didn't win, but the recipe is a winner in my book! Also this includes very useful contact info for my dad- his home phone from the 90s and his digital pager :-).
