Asian Coleslaw

This was my mom's absolute favorite type of coleslaw (she went as far as to label it the ONLY coleslaw she loves)!! She didn't like mayonnaise-based coleslaws which are often overly fatty and limp. This asian-style coleslaw is from her friend Nancy and it was my mom's total favorite!
